Many people know the lotus plant for its characteristic flower, floating on rivers wiith his marvelous colors.

Did you know that its root, which in Japanese is called Renkon – 蓮 根, is not only edible but also a popular ingredient in Asian cuisine?

The first time I saw and tasted it, I was impressed. Not only for its curious appearance, which makes it a natural piece art, but also for its crunchy texture even after cooking, never tried before.

From the Nutritional point of view, this root is also a real superfood. It is rich in phytonutrients, minerals, including mainly copper, iron, zinc, magnesium and manganese, and vitamins; among these, vitamin C, an important antioxidant, and vitamin B, essential for transforming carbohydrates into energy, stands out.

In short, a real source of well-being.

I had the chance to try and taste different recipes that saw it as the protagonist: cut thin and fried to form chips, boiled in dashi broth and served in rich Obento or again, used instead of bread to make mini sandwiches filled with meat or vegetables.

Among all its preparations, the one I propose to you today sees the root as the protagonist along with pork and vegetables, cooked in a sweet and sour sauce sprinkled with white sesame seeds. Must try!

INGREDIENTS

– Medium-sized Renkon 1 – (about 250 g)
– Pork (thin slices) – about 250 gr
– Boiled Green Beans – Quanto Basta
– Onion – 1/2
– Sake spoon – 1,5 Spoons
– Mirin – 1.5 Spoons
– Olive Oil – 1 Spoon

TO MARINATE THE MEAT

– Soy sauce – 1 Tbsp
– Sake – 1 tbsp
– Starch – 1 tsp

FOR THE SAUCE

– Sugar – 1.5 Tbsp
– Soy sauce – 1.5 Tbsp
– 酢 Rice vinegar – 1.5 Tbsp
– Concentrated Tomato – 3 Tbsp
– Sesame oil (or olive oil) – 1 Tbsp

Let’s Start!

Peel the lotus root in 8 mm thick round slices and place it in water and vinegar so that it does not oxidize (it tends to change color very quickly);

In the meantime, combine all the ingredients of the sauce and mix them well;

Take the slices of meat, cut them into vertical strips of the same length and marinate them with the ingredients listed above. Cover it with transparent paper and let it rest in the fridge, just long enough to prepare the next steps.

Cut 1/2 onion and brown it with a tablespoon of oil in a pan with a tablespoon of oil. Take the meat to cook on both sides.

Drain the lotus root, rinse it, dry it well and place it in the pan. Fry it lightly.  Insert your green beans and lastly, lowering the heat, the sauce. Mix well everything together!

Et voilà! In15 minutes a tasty dish to eat with a rice bowl and a good salad!
